Caprese Chicken Salad Meal Prep Bowls

Ingredients

¾ cup quinoa (uncooked)
-
1 Tbsp olive oil
-
1 Tbsp balsamic vinegar
-
1 lb boneless skinless chicken breasts
-
Salt and pepper
-
3 cups cherry tomatoes (halved)
-
1 bunch basil
-
1 cup baby mozzarella
Balsamic Vinaigrette:
-
3 Tbsp olive oil
-
3 Tbsp balsamic vinegar
-
1 Tbsp maple syrup
-
¼ tsp dijon
-
Salt and pepper
Directions
1. Cook the quinoa according to package directions and allow it to cool.
2. Heat the oven to 425°F and toss 1 lb boneless skinless chicken breast with 1 tablespoon of olive oil, and 1 tablespoon of balsamic vinegar. Transfer the chicken to the baking dish and season with salt and pepper. Bake for 25 minutes. Once the chicken has rested for at least 10 minutes, slice it against the grain.
3. In a salad dressing shaker or a mason jar, combine the olive oil, balsamic vinegar, maple syrup, dijon, salt, and pepper. Portion the dressing out into condiment containers.
4. In four meal prep containers, divide the cooled quinoa, chicken, cherry tomatoes, mozzarella balls, and basil leaves. Store the containers in the fridge for up to four days.
No-Cook Taco Salad Bento Box

1 cup black beans

1 cup corn kernels

3 cups romaine lettuce
-
½ cup shredded cheese
-
½ cup dressing of choice
-
Tortilla chips
Pico De Gallo:

4 Roma tomatoes (chopped)
-
1 jalapeño pepper (seeds removed and finely chopped)
-
2 Tbsp red onion (finely chopped)
-
⅛ tsp salt
-
1 tsp lime juice
Directions
1. Divide the ingredients into four storage containers. Use a condiment container to keep the dressing separate until just prior to serving.
2. Stir the pico de gallo ingredients together and add them to the bento box container.
3. Store the lunch in the fridge for up to four days.
Spicy Thai Salad Panera Recipe

Ingredients

1 Tbsp oil

½ cup carrots (chopped)

½ cup bell pepper (chopped)
-
½ cup edamame
-
1 large chicken breast (sliced or chopped)
-
6 cups lettuce
-
¼ cup almonds (slivered)
-
¼ cup cilantro (fresh and chopped)
Directions
1. Preheat a heavy skillet on medium heat. Add the oil, chicken, salt, and black pepper. Cook until the juices run clear and the meat is done.
2. While the chicken is cooking, prepare your carrots, bell pepper, lettuce, and cilantro.
3. Once the chicken is done, add the carrots, bell pepper, and edamame to cook for 10 minutes, stirring often.
4. Prepare the dressing by adding all the dressing ingredients to a small bowl and mixing it with a whisk.
5. In a large bowl, add the chopped lettuce, almonds, and cilantro to combine. Once the chicken and vegetables are done, remove them from the heat and let them cool for 5-10 minutes before adding them to the salad.
6. Store in containers and keep the dressing separate until you serve it.
