Christmas morning is finally here! Whether you like to make the morning a quiet pajama day celebrating with loved ones or it’s a hubbub of chaos with wrapping paper strewn everywhere, at some point, everyone will want something for breakfast. No matter your schedule, we have some Christmas breakfast ideas that will leave everyone feeling merry!
Crescent Bacon Breakfast Ring

Ingredients

5 eggs
-
1/2 red bell pepper chopped

1/2 green bell pepper chopped

1/4 tsp salt or to taste
-
1/4 tsp pepper or to taste

8 slices bacon fried
-
8 oz crescent rolls refrigerated, I used 1 can (8 oz) Pillsbury crescents
-
1 cup cheddar cheese shredded
-
1 egg for egg wash, optional
Directions
-
Preheat oven to 375 F degrees.
-
In a bowl beat the eggs with the chopped peppers, salt and pepper. Cook the eggs in a skillet so that they’re scrambled. You can use the same skillet you used to fry the bacon, just drain the fat first.

Lay out the crescent rolls on a parchment pepper, like a star as shown in the pictures above.

On each crescent roll lay a piece of bacon. Add half of the cheese around the ring. Add the scrambled eggs around the ring and top with remainder of the cheese.

Fold the crescents over. You may brush with the egg wash if you prefer, I did because it gives the ring a nice golden colour.

Bake for 20 minutes or until the crescents are cooked and golden brown.

Garnish with parsley, if preferred. Serve warm
Overnight Cinnamon Apple French Toast Bake

3 tablespoons unsalted butter

3 large apples, peeled and diced

2 tablespoons brown sugar

1 1/2 teaspoons ground cinnamon, divided
-
1 (16-ounce) loaf brioche bread, cubed
-
1 (8-ounce) package cream cheese, cubed
-
12 large eggs, beaten
-
2 cups whole milk
-
1/3 cup maple syrup
-
1 teaspoon vanilla extract
-
1/2 teaspoon kosher salt
-
1/2 cup chopped pecans
-
1 tablespoon confectioners’ sugar
Directions
-
Melt butter in a large skillet over medium heat. Add apples and cook, stirring often, until just tender, about 5 minutes. Stir in brown sugar and 1 teaspoon cinnamon; continue cooking until sugar has dissolved, about 1-2 minutes. Let cool.

Lightly coat a 9×13 baking dish with nonstick spray. Place a layer of bread cubes evenly into the baking dish. Top with cream cheese and half the apple mixture in an even layer. Top with remaining bread cubes and remaining apple mixture.

In a large glass measuring cup or another bowl, whisk together eggs, milk, maple syrup, vanilla, salt and remaining 1/2 teaspoon cinnamon. Pour mixture evenly over the bread cubes. Cover and place in the refrigerator for at least 2 hours or overnight.

Preheat oven to 350 degrees F. Remove baking dish from the refrigerator; let stand 30 minutes.

Sprinkle with pecans; place into oven and bake, covered, for 30 minutes. Uncover; continue to bake for an additional 25-30 minutes, or until golden brown and center is firm.

Serve immediately, sprinkled with confectioners’ sugar, if desired.
Make Ahead Breakfast Sandwiches

10 eggs

1/2 cup milk

1/2 tsp salt

1/2 tsp ground black pepper

24 thin slices of ham

8 oz sliced Colby Jack cheese

12 sliced dinner rolls

1/2 cup butter, melted
-
1 1/2 tsp poppy seeds
-
1 1/2 tsp yellow mustard
-
1 tsp onion powder
-
1 tsp worcestershire sauce
Directions
-
In a medium bowl, whisk together eggs, milk, salt and pepper. Cook in an electric skillet in a thin even layer until slightly firm. Do not over cook as the eggs will get tough. Slice in to 12 portions.

In a 9X13 greased pan, place the bottom half of all 12 rolls.
-
Top with one portion egg, 2 slices thin ham, 1/2 slice cheese, top with the other half of the roll.

In a glass measuring cup, melt the butter and stir in poppy seeds, mustard, onion powder, and worcestershire sauce.

Brush sauce over tops of rolls.

Cover with foil and refrigerate overnight or until ready to serve.

15 minutes before serving, preheat oven to 350 degrees.

Remove foil from pan and bake for 10-15 minutes until heated through and golden brown.

Serve warm and with a smile.

Eggnog French Toast Muffins

1.5 cup eggnog

1/2 teaspoon nutmeg plus extra for sprinkling

1 teaspoon pure vanilla extract

12 slices brioche bread

2 tablespoons butter
Directions

Preheat a large nonstick electric griddle to medium heat. In a large pie pan or mixing bowl, whisk together eggs, eggnog, nutmeg and vanilla extract.

Melt one tablespoon of butter on griddle. Dip each side of slice in eggnog mixture, lightly shaking off excess and place on griddle. Cook until golden brown on both sides.

Serve with warm maple syrup, whipped cream and sugared cranberries, if desired.
Gingerbread Pancakes

2 1/4 cups flour

2 teaspoons cinnamon

2 teaspoons Gingerbread Spice Mix

2 teaspoons baking powder

1/4 cup brown sugar (dark brown preferred)

1/2 teaspoon salt

1 1/4 cup milk
-
1/3 cup molasses (not blackstrap molasses, they’re too bitter!)

2 large eggs
-
3 tablespoons vegetable oil

In a large bowl mix the dry ingredients well. Whisk the wet ingredients together in a separate measuring jug until smooth.

Pour the wet into the dry ingredients. Fold together with a spoon or spatula just until combined – some lumps are fine.

Heat a griddle or frying pan over medium-low heat. Spray with nonstick cooking spray or use a little oil to keep the pancakes from sticking. Pour 2-3 tablespoons of the batter onto the griddle or into the frying pan per pancake. Cook for a few minutes or until you start seeing bubbles forming on the surface. Flip and continue cooking for another 1-2 minutes.
Easy Cinnamon Rolls

16 oz pizza dough

2 tbsp softened butter or coconut oil, or applesauce for low fat

3 tbsp sugar, unrefined or sugar sub if desired

2-3 teaspoons cinnamon
Directions
Roll out dough on a floured surface (any flour works, even coconut flour). If dough is too sticky to roll, just add more flour of choice a little at a time. Roll very thinly (just under 1/4-inch is perfect). Spread remaining ingredients on top. Cut long strips, then roll each up as tightly as possible. Put in a greased baking pan. Preheat oven to 400 F. Bake 20 minutes.
Frosting Options
Cream Cheese Frosting:
Beat room temperature 8 oz cream cheese or vegan cream cheese with 4 oz butter spread, 2 cups powdered sugar, and 1 tsp pure vanilla extract. Add a little milk of choice as needed.
Basic Cinnamon Roll Glaze:
Mix 1 1/2 cups powdered sugar or sugar-free powdered sugar with 2-4 tbsp milk of choice. Whisk ingredients to form a glaze. Drizzle over rolls with a spoon.
Crockpot Cinnamon Roll Monkey Bread

2 cans Refrigerator Cinnamon Rolls

¼ cup sugar

1 tsp cinnamon
-
¼ cup brown sugar
-
½ cup butter melted
Directions
-
Spray Crockpot with non-stick spray.
-
Cut refrigerator cinnamon rolls into quarters.

Combine sugar, brown sugar, and cinnamon in a bowl.
-
Place cinnamon roll pieces in a large bowl, pour melted butter over cinnamon roll pieces and toss to cover all pieces.

Pour cinnamon and sugar mix over cinnamon roll pieces and toss to combine.

Pour cinnamon roll pieces into sprayed slow cooker.

Cover and cook on low for 2 hours.
