There’s nothing quite like a slow morning. The birds are chirping, your pajamas are still on, the coffee just brewed, and you get to simply…be. The only thing that could make these mornings easier is a not needing to make!
While freshly cooked eggs and bacon are always a treat, they can take away from your otherwise slow-paced mornings. Today, we’re sharing some of our favorite breakfasts that you can make ahead of time! These will make your mornings easier and give you something to look forward to as you mosey out of bed. Here are our favorite make-ahead breakfasts!
Healthy Oatmeal Banana Chocolate Chip Muffins

Ingredients

2 cups of oat flour
-
1 ½ cups of milk
-
1 cup of mashed bananas
-
1 tsp of vanilla extract
-
¾ cups of all purpose flour
-
1 tsp of baking powder
-
¾ tsp of baking soda
-
1 tsp of cinnamon
-
¼ tsp of salt
-
2 Tbsp of unsalted butter (melted)
-
¼ cup of honey or maple syrup
-
½ cup of chocolate chips
Directions
1. Preheat the oven to 350°F. Grease and line a 12-muffin tin. Set aside.
2. In a bowl mix together the oat flour, bananas, and vanilla extract then let the mixture sit for 10-15 minutes.
3. In another bowl combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
4. In another bowl, whisk the butter and honey together.
5. Once the oat mixture has soaked for 10-15 minutes, add the butter mixture to it. Mix well and then add the flour mixture. Mix everything until just combined.
6. Fold in the chocolate chips and scoop the mixture into the lined muffin tins. You can fill them almost to the top because they won’t get much of a rise in the oven. Bake for 18-20 minutes.
Western Omelet Quiche

Ingredients

A 9 inch deep dish pie shell
-
4 green onions (thinly sliced)

⅓ cup of chopped green bell pepper
-
⅓ cup of chopped red bell pepper
-
2 Tbsp of butter
-
4 oz of smoked ham (chopped)
-
1 ½ cup of colby jack or cheddar cheese
-
1 cup of heavy cream
-
6 large eggs
-
1 tsp of garlic salt
-
½ tsp of black pepper
-
½ tsp of onion powder
-
¼ tsp of ground mustard
Directions
1. Preheat the oven to 375°F. Prick the bottom of the frozen pie shell with a fork. Bake for 5 minutes and set aside.
2. Melt the butter in a small skillet. Cook the sliced green onion, green pepper, and red pepper for about 2-3 minutes until they soften.
3. Layer ½ of the ham and ½ of the shredded cheese on the bottom of the pie.
4. Whisk together the heavy cream, eggs, and seasonings until fully combined. Add the cooked vegetables to the custard.
5. Pour ½ of the cream mixture over the first layer of ham and cheese and repeat.
6. Place the pie onto the baking sheet and place in the oven. Bake for 10 minutes.
7. Lower the oven temperature to 350°F and continue cooking for an additional 30-40 minutes.
8. Store in the fridge for the morning!
Cherry Bakewell Overnight Oats

Overnight Base:

½ cup of oats

1 cup of mlk (option to be dairy free)

½ cup of vanilla yogurt (dairy free option)

1 tsp of almond extract
-
1 tsp of cinnamon
Toppings:

¼ cup of cherries
-
Some flaked almonds
-
2 ½ tsp of almond/peanut butter
-
¼ cup of homemade granola
-
½ cup of frozen berries
Directions
1. The night before, add all of the overnight oat base ingredients to a dish. Stir to combine and pop it in the fridge.
2. In the morning, wake up and add the toppings!
3. You can add whatever toppings you would like if you don’t love cherry.
Chocolate Chia Seed Pudding

Ingredients

2 Tbsp of cocoa powder

2 Tbsp of brown sugar

1 tsp of hazelnut flavored instant coffee powder (optional)

¼ cup of chia seeds
-
1 cup of milk
-
2 tsp of honey
Directions
1. Mix the cocoa powder, brown sugar, and instant coffee in a bowl. Stir until no lumps remain. Fold the chia seeds into the mixture then pour the milk into the bowl and stir to incorporate. Let the mixture sit a few minutes before stirring again. Rest and re-stir a few times for about 20 minutes.
2. Cover the bowl with plastic wrap and refrigerate for 2 hours or overnight.
3. Drizzle the honey over the pudding to serve.
Blueberry Oatmeal Breakfast Bars

Base Layer:

1 ripe banana (mashed)

¼ cup of brown rice syrup (or maple syrup or agave nectar)

1 Tbsp of unsweetened applesauce
-
1 Tbsp of unrefined coconut oil (not melted)

1 ½ tsp of vanilla extract
-
2 cups of gluten free rolled oats
-
1 scoop of plant based protein powder
-
1 tsp of ground cinnamon
-
½ tsp of sea salt
Topping:
-
½ cup of gluten free rolled oats
-
2 Tbsp of chia seeds
-
2 Tbsp of hemp seeds
-
¼ tsp of ground cinnamon
-
2 Tbsp of brown rice syrup (or maple syrup/agave nectar)
-
2 Tbsp of fresh lemon juice (½ a lemon)
-
1 cup of fresh blueberries
-
¼ cup of crushed almonds (or any kind of nut)
Directions
1. Preheat the oven to 350°F. Line a 9×9 square pan with parchment paper and lightly grease with nonstick spray or coconut oil.
2. In a mixing bowl, use a hand mixer to mix the banana, syrup, applesauce, coconut oil, and vanilla extract until the mixture is smooth. Mix in the oats, protein powder, cinnamon, and salt until well combined. The mixture will be wet.
3. Transfer the base layer into the square pan. Smooth it out with a spatula and press down evenly. Bake for 9-11 minutes.
4. In the same mixing bowl, combine all the ingredients for the topping layer until well combined. Remove the pan from the oven.
5. Pour the topping layer over and spread it out evenly, pressing it down into the base layer with a spatula. Bake for an additional 15 minutes.
6. Allow the bars to cool and set for 15-20 minutes before slicing them into squares. Store in the refrigerator.
Overnight Breakfast Casserole

1 lb of breakfast sausage

½ lb of bacon (cooked and chopped)

6 large eggs

1 tsp of mustard

1 tsp of salt

6 slices of white bread (cubed)

1 cup of shredded cheddar cheese
Directions
1. Brown and drain the sausage.
2. Add the eggs, milk, salt, and mustard to a bowl and whisk together.
3. Add the bacon, sausage, cheese, and bread and stir to combine.
4. Pour the contents into a 9×13 baking dish and refrigerate overnight.
5. In the morning, just stick the dish in the oven at 350°F for 40 minutes and serve!
The Best Banana Bread

Directions
1. Preheat the oven to 350°F and butter a 4×8 inch loaf pan.
2. In a mixing bowl, mash the ripe bananas with a fork until they are completely smooth. Stir in the melted butter and mix.
3. Mix in the baking soda and salt. Then add the sugar, beaten egg, and vanilla extract. Finally, mix in the flour.
4. Pour the batter into your prepared loaf pan. Bake for 50-60 minutes, or until a toothpick or wooden skewer inserted into the center comes out clean.
