Mickey Mouse-Shaped Beignets

Ingredients

  • ½ tsp of dry yeast

  • ¼ cup of warm water

  • ¼ cup of sugar

  • 2 Tbsp of vegetable shortening 

  • ½ tsp of salt

  • ½ cup of heavy cream

  • 1 egg

  • 4 cups of all-purpose flour

  • ½ cup of boiling water

  • Vegetable oil for frying

  • Powdered sugar

Directions

1. Sprinkle yeast over warm water in a small bowl and stir until it dissolves. Let it stand for about 5 minutes. 

2. Combine the sugar, shortening, salt, heavy cream, egg, flour, and boiling water in a large bowl, then stir in the yeast. Use a dough hook attachment on the electric mixer and mix on medium speed until the dough is just combined and smooth. Let the dough rest for 30 minutes. 

3. Roll the dough out to ¼-inch thickness and cut individual beignets with a Mickey Mouse-shaped cutter or cut into 2 ½ – 3 inch squares. Cover the beignets with a towel and let the dough rise to double in size in a warm, draft-free area. This should take about 1 – 1 ½ hours.

4. Heat 3 inches of vegetable oil to 350°F in a deep, heavy pot over medium-high heat. Fry the beignets until they are golden brown, about 2-3 minutes. Turn them as soon as they brown on one side. Remove with (Disney-inspired) tongs and place on a towel to drain. 

5. Dust the warm beignets with powdered sugar and serve!


Empire Biscuits

Ingredients

Cookies:

  • 2-3 cups of flour (depending on how sticky the batter is)

  • ¾ cups of sugar

  • ½ cup of butter

  • ¼ cup of whole milk 

  • 3 eggs

  • 2 Tbsp of vanilla extract

  • 1 Tbsp of baking powder

Icing:

  • ½ cup of confectioners sugar

  • 1-2 Tbsp of whole milk

  • Glacé cherries

Directions

1. Preheat the oven to 350°F. Combine the flour, baking powder, and salt and set aside. In a stand mixer cream the softened butter and sugar together. Add in the milk, one egg at a time, then the vanilla extract. Slowly add more flour until the mixture is well combined. 

2. Drop the cookie dough onto a baking sheet and bake for 7-9 minutes. 

3. Let the cookies cool before icing. 

4. Combine the confectioners sugar with milk and mix until the consistency isn’t too runny. You might want to add in more icing sugar to get this consistency.

5. Top the iced cookies with cherries and serve!


The Grey Stuff

Ingredients

  • 1 ½ cups of cold whole milk

  • 1 package of instant vanilla pudding mix

  • 15 chocolate sandwich cookies (Oreos)

  • 1 container of whipped topping (thawed)

  • 3 Tbsp of instant chocolate pudding mix

  • 12 scalloped sugar cookies

  • Edible sugar pearls

Directions

1. Pour the milk into a large mixing bowl. Add the instant vanilla pudding mix and whisk for about 2 minutes until the mixture is smooth and slightly thickened. Place the mixture in the refrigerator for about 1-2 hours until firm.

2. Place the chocolate sandwich cookies in a food processor and pulse until puréed. 

3. Fold the puréed cookies into the pudding mix and stir until the mixture is fully mixed. 

4. Add the whipped topping and instant chocolate pudding and stir again until it is fully mixed. 

5. Place in the refrigerator and chill for one hour. 

6. Spoon the grey stuff onto the scalloped sugar cookies and top with sugar pearls.


Spinach Puffs

Ingredients

  • 1 (10 ounce) package of frozen, chopped spinach (thawed)

  • ½ cup of crumbled feta cheese

  • 1 small onion (minced)

  • 1 clove of garlic (minced)

  • 1 Tbsp of olive oil 

  • 1 tsp of chopped dill

  • Kosher salt and freshly ground black pepper

  • 2 large eggs

  • 1 sheet of frozen puff pastry (thawed and rolled out into 12” squares)

Directions

1. Preheat the oven to 400°F. Spray a standard sized 6-cup muffin tin with nonstick baking spray. 

2. Squeeze out as much water from the thawed spinach as possible and mix the spinach, feta, onion, garlic, olive oil, and dill together. Season to taste with salt and pepper. 

3. In a small bowl, beat one egg before gently stirring it into the spinach mixture. 

4. Cut the pastry into 3 equal strips. Reserve 1 strip for another use and cut the remaining 2 strips into 3 squares. This should produce 6 equal squares. 

5. Place each square into a muffin cup and press firmly into the bottom and up the sides, leaving the corners pointing up. Divide the filling evenly among the pastry cups and fold the pastry over the filling, pressing the corners together to meet in the center. 

6. Beat the remaining egg in a small bowl. Brush the pastry with the egg wash.

7. Bake until the pastry is golden brown and puffed. This should take about 25 minutes.

8. Transfer the muffin tin to a wire rack and let the puffs cool for about 10 minutes. Run a sharp knife around the edges of the puffs to loosen them before turning them over and onto the rack. 

9. Cool slightly and serve!


Ohana Bread Pudding

Ingredients

Bread Pudding:

  • 5 eggs

  • 3 cups of whole milk

  • ½ tsp of salt 

  • ½ tsp of nutmeg

  • 1 ½ cup of sugar

  • 8 cups of French, Challah, or ‘Ohana breakfast bread 

Bananas Foster Sauce:

  • ½ cup of sugar

  • ½ cup of brown sugar

  • ½ cup of corn syrup

  • ½ cup of unsalted butter

  • 1 cup of heavy cream 

  • 1 tsp of vanilla extract

  • 1 cup of spiced rum

  • 1 cup of banana slices

Directions

1. Preheat the oven to 325°F. 

2. In a large bowl, mix the eggs, salt, sugar, and nutmeg. Set aside. 

3. Slice the bread into 2-inch pieces and place the bread on a cookie sheet pan.

4. Place the baking pan in a preheated oven and bake the bread for 15 minutes or until lightly toasted. Take the bread out of the oven and place it into the egg and milk mixture.

5. Pour the mixture into a greased 10-inch cake pan and bake in the oven for one hour. 

6. Let the bread pudding cool for 5 minutes before serving. 

7. While the bread mixture is cooking, combine the sugar, brown sugar, corn syrup, butter, and half of the heavy cream in a large saucepan. Bring to a boil and slowly add the remaining heavy cream while keeping the mixture at a steady boil. 

8. Add the spiced rum and flambe. 

9. The mixture will brown slightly. Cool for 3 minutes until candy forms into a firm ball in cold water then remove from the heat and add vanilla extract. Add the sliced bananas and serve warm over bread pudding.


Disney Dole Whip

Ingredients

  • 1 scoop of vanilla ice cream

  • 4 ounces of pineapple juice

  • 2 cups of frozen pineapple

Directions

1. Add all 3 ingredients to a blender and blend until smooth.

2. You can scoop it into a bowl or squeeze it out of a piping bag to get the iconic yellow swirl.


Peanut Butter & Jelly Milkshake

  • 2 Tbsp of jelly (strawberry or grape) or sub 2 cup of sliced strawberries

  • 2 cups of vanilla ice cream

  • ¼ cup of milk

Directions

1. Add all the ingredients and blend until smooth.

2. Add additional PB or J to taste!
