Spiced Hot Apple Cider

Ingredients

  • 2 cinnamon sticks

  • 1 piece fresh ginger root (thinly sliced)

  • 1 tsp whole allspice

  • 1 tsp whole cloves

  • ½ tsp cardamom pods (crushed)

  • 2 quarts apple cider

  • Rum (optional)

Instructions

  1. Place the first five ingredients on a double-thickness cheesecloth. Gather the corners of the cloth to enclose the spice mixture and tie it securely with a string. 

  2. Place the cider and spice bag in a 3-quart slow cooker. Cook, covered, to allow the flavors to blend for 2-3 hours. Discard the spice bag and, if desired, stir in the rum.

Slow Cooker Caramel Apple Cider

Ingredients

  • 8 cups apple cider or juice

  • 1 cup caramel syrup

  • ¼ cup lemon juice

  • 1 vanilla bean 

  • 2 cinnamon sticks

  • 1 Tbsp whole allspice

  • Whipped cream, caramel ice cream, and cinnamon sticks (optional for topping)

Instructions

  1. In a 3-quart slow cooker, combine the apple cider, caramel syrup, and lemon juice. Split the vanilla bean and scrape the seeds. Add the seeds to the cider mixture. Place the bean, cinnamon sticks, and allspice on a double-thickness cheesecloth, bring up the corners of the cloth and tie it with a string to form a bag. Add the cider to the mixture. 

  2. Cover and cook on low for 2-3 hours. Discard the spice bag and pour the cider into the mugs. Garnish with whipped cream, caramel topping, and additional cinnamon sticks, if desired.

Spiced Hard Cider

Ingredients

  • ½ oz. fresh lemon juice

  • ½ oz. simple syrup

  • 1 pinch allspice

  • 1 pinch cinnamon

  • 1 pinch cloves

  • 1 + ½ oz. Applejack

  • 5 oz. hard cider

  • Apple slices (for garnish)

  • 1 cinnamon stick (for garnish)

Instructions

  1. In a cocktail shaker, combine the lemon juice, simple syrup, and spices. Add the Applejack and fill the shaker with ice. Cap and shake for 5 seconds. 

  2. Stain the drink into a Collins glass, fill it with ice cubes, and top it with hard cider. 

  3. Garnish with apple slices and a cinnamon stick to serve.

Smoky Harvest Apple Cider Margarita

Ingredients

  • Cinnamon sugar and flaky sea salt (for the rim)

  • 2 oz. mezcal or silver tequila

  • ½ oz. orange liquor

  • 4 oz. apple cider

  • Juice from ½ lime

  • 1-2 tsp maple syrup

  • Apple slices and cinnamon sticks (for serving)

Instructions

  1. If desired, rim your glass in salted cinnamon sugar. Mix equal parts cinnamon sugar and sea salt. Run a lime wedge around the rim of the glass and coat it in sugar. 

  2. Combine the mezcal or tequila, orange liquor, apple cider, lime juice, and maple in a cocktail shaker. Add the ice and shake to combine. Strain the drink into a glass and garnish with apple slices and cinnamon sticks. If desired, light the cinnamon on fire for a smoky effect.

Sparkling Vanilla-Scented Apple Cider Party Punch

Ingredients

  • ⅓ cup coconut sugar

  • 1 tsp pure vanilla extract

  • 1 vanilla bean (split)

  • 4 cups fresh pressed apple cider

  • 1 cup unsweetened cranberry juice

  • 2 apples (to garnish)

  • 4 cups ice

  • 24 oz. non-alcoholic sparkling apple juice

  • Frozen cranberries (optional)

  • 8 oz. bourbon (optional)

Instructions

  1. In a small pot, combine the coconut sugar, vanilla extract, split vanilla bean, and 1 cup of fresh-pressed apple cider. Bring the pot to a simmer over medium heat, stirring constantly to dissolve the sugar. Once the infusion has boiled, turn the heat off and cover the pot with a lid. Allow it to infuse for an hour. Cool the vanilla infusion completely. 

  2. In a large pitcher, combine the remaining apple cider, cranberry juice, and vanilla syrup. Stir well to combine. Thinly slice the apples and add them to the pitcher. 

  3. Pour the punch with apple slices into the punch bowl. Add the ice and pour the sparkling apple juice in. Float a few frozen cranberries on top and stir well.

Ginger Pear Cider

Ingredients

  • 2 ripe pears (cored and chopped)

  • 1-2 inches ginger root (peeled and chopped)

  • 1-inch piece fresh vanilla bean

  • 1 + ¼ cups water

  • ½ tsp pure maple syrup

  • 2 tsp fresh lemon juice

Instructions

  1. In an upright blender, combine the chopped pears, ginger, vanilla bean, and water. Blend on high until you have a smooth, slightly thick puree. 

  2. Set a fine mesh strainer over a small saucepan and pour the pear puree through it and into the saucepan. Stir and push the solids around until all of the available juice and liquid is in the saucepan. 

  3. Gently heat the pear cider in the saucepan over medium-low heat. Once it’s warmed to your liking, stir in the maple syrup and juice. Serve immediately.
