I adore coffee. In Lorelai Gilmore’s words, “I need coffee in an IV.” That being said, I don’t always adore paying $6 for coffee every time I need my fix. So today, we’re making coffee from our own homes! We’ve found our favorite Starbucks fall drinks (plus some more surprises) for you to make today!
Pumpkin Spice Latte

Ingredients

½ cup of milk
-
2 Tbsp of unsweetened pumpkin puree
-
1 tsp of brown sugar
-
1 tsp of vanilla extract
-
¼ tsp of pumpkin pie spice
-
1 cup of brewed espresso or coffee
-
2 Tbsp of half-and-half
-
2 tsp of sugar
-
Whipped cream and nutmeg
Directions
1. Whisk the milk, pumpkin, brown sugar, vanilla, and spice in a glass measuring cup or a microwave-safe bowl. Microwave the mixture for 1-2 minutes and stop when the milk is frothy.
2. Pour the pumpkin milk into a tall mug or glass. Add the hot coffee, cream, and a spoonful of sugar. Stir and taste to see if you want to add more sugar.
3. Top with whipped cream and a sprinkle of nutmeg if you want!
Pumpkin Cream Cold Brew

Ingredients
Coffee:

1 + ½ cups of cold brew coffee
-
1-3 tsp of maple syrup
-
¼ tsp of vanilla extract
Pumpkin Foam Topping:
-
¼ cup of milk
-
½ tsp of maple syrup
-
½ tsp of pumpkin puree
-
½ tsp of vanilla extract
-
¼ tsp of pumpkin pie spice
-
A pinch of fine sea salt
Directions
1. Prepare whichever type of iced coffee you want, then stir in the maple syrup and vanilla extract.
2. In a measuring cup or a frothing pitcher, combine the cold milk, maple syrup, pumpkin puree, vanilla, pumpkin pie spice, and salt. Use a milk frother to froth the milk until it reaches a tight whipped-cream-like foam consistency.
3. Fill a serving glass with ice. Pour in the iced coffee, then spoon the pumpkin foam on the top. Sprinkle it with an extra pinch of pumpkin pie spice and enjoy immediately!
Salted Caramel Mocha

Coffee:

1 + ½ Tbsp of caramel sauce
-
⅛ tsp of sea salt
-
1 + ½ Tbsp of chocolate syrup
-
½ cup of strong coffee
-
½ cup of whole milk
Toppings:
-
Whipped cream
-
Caramel sauce
-
Sea salt
-
Brown sugar
Directions
1. Add the caramel sauce, sea salt, and chocolate syrup to a glass mug.
2. Make the coffee, add it to the mug, and mix well.
3. Froth the mix until it’s foamy and slowly pour it into the mug.
4. Top the coffee with whipped cream and drizzle with caramel sauce. Sprinkle with optional sea salt and sugar and serve immediately.
Caramel Apple Spice

Ingredients
Drink:

64 oz. of 100% pure apple juice
-
½ cup of white sugar
-
½ cup of brown sugar (packed)
-
2 Tbsp of flour
-
½ tsp of cinnamon
-
1 cup of water
-
1 tsp of vanilla extract
Topping:
-
1 cup of heavy whipping cream
-
5 Tbsp of powdered sugar
-
½ tsp of vanilla extract
-
A couple of dashes of cinnamon
-
Caramel topping
Directions
1. Add the apple juice to a large pot and steam over medium-low heat, but don’t boil.
2. In a small pot, mix the sugars, flour, and cinnamon, then stir in the water.
3. Bring the mixture to a light boil over medium heat and boil for 2 minutes, or until the syrup thickens.
4. Remove the pot from the heat and let it cool. The syrup will thicken more as it cools. Add in the vanilla extract.
5. Pour the cinnamon dolce syrup into the steamed apple juice or place the syrup into a syrup dispenser.
6. To make the whipped cream, add the whipping cream and powdered sugar to a chilled bowl. Beat with chilled beaters for 2-3 minutes on high speed until the mixture is fluffy and light. Don’t overmix.
7. Fold in the vanilla and add a few dashes of cinnamon.
8. Top the coffee with whipped cream and serve immediately!
Apple Crisp Macchiato (Iced and Hot)

Ingredients
Apple Crisp Drizzle:

2 cups of apple juice
-
2 Tbsp of brown sugar
-
⅛ tsp of cinnamon
Apple Crisp Syrup:
-
1 large apple (sliced)
-
⅓ cup of brown sugar
-
¼ cup of apple juice
-
¾ cups of water
-
¼ tsp of cinnamon
-
½ tsp of vanilla
-
½ tsp of apple flavoring
Macchiato:
-
2 Tbsp of Apple crisp syrup
-
¾ cup of milk
-
1 espresso shot
-
2 Tbsp of Apple Crisp drizzle
Directions
1. Make the Apple Syrup. Place the sliced apple in a medium saucepan and top it with brown sugar, cinnamon, vanilla extract, apple juice, and water.
2. Bring the mixture to a boil over medium heat, then reduce to medium-low heat and simmer for 15 minutes. Remove it from the heat and add in the apple flavoring and stir.
3. Let the syrup cool fully, then strain.
4. Make the Apple Drizzle. Place the apple juice, brown sugar, and cinnamon in a medium saucepan.
5. Bring the mixture to a boil, then reduce it to a simmer until the apple juice has been reduced by a little over ¾ of the original amount. This should take 25-30 minutes.
6. Let the syrup cool to room temperature until it resembles a caramel sauce.
7. Add milk, 2 tablespoons of brown sugar, and ice to a cup. Top this with the freshly brewed espresso and drizzle with 2 tablespoons of apple crisp and stir it!
Iced Chai with Pumpkin Sweet Cream Foam

Ingredients
Iced Chai:

½ cup of chai tea concentrate
-
½ cup of milk
-
Ice
Pumpkin Cream Foam:
-
3 Tbsp of heavy cream
-
2 Tbsp of pumpkin puree
-
Nutmeg
Directions
1. Fill a 24-ounce cup ⅔ full of ice. Add the milk and chai tea and stir to combine.
2. Use a blender to blend the cream and pumpkin and blend until foam forms.
3. Top the chai tea with foam and garnish with nutmeg.
