We want to celebrate BIG this St. Patrick’s Day, so we made an easy and yummy post for you to celebrate and cook up a storm this year! So put on your green clothes, preheat the oven, and get ready for an article that will make your mouth water!
Shepherd’s Pie

Ingredients
Meat Layer:

1 pound extra lean ground beef
-
1 ½ cup diced onions
-
1 cup diced celery
-
½ cup diced carrots
-
1 cup beef stock
-
3 tbsp tomato paste
-
1 tbsp worcestershire sauce
-
2 tsps dried rosemary
-
2 tsps dried thyme
-
1 ½ tsp salt
-
½ tsp pepper
-
1 tbsp olive oil
Potato Layer:
-
2 ½ lbs potatoes
-
4 tbsp butter
-
½ cup grated parmesan cheese
-
1 tbsp olive oil
Directions
-
Cook potatoes in boiling water for 30 mins.

Heat olive oil, beef, rosemary, thyme, salt, and pepper in a large pan on medium heat, stirring for about 5 minutes.

Add diced onions, celery, and carrots. Cook until vegetables soften (about five more minutes).

Add beef stock, tomato paste, and Worcestershire sauce. Reduce heat to medium-low and allow to simmer until it thickens for about 15 minutes.

When the potatoes are done cooking, drain them and add butter and parmesan cheese to the pot. Mash until smooth.

Add meat mixture to a 2 quart baking dish, making a flat layer on the bottom. Spoon the potatoes over the meat and drizzle with olive oil. Bake at 400 F for about 30 minutes or until the peaks of the potatoes are crispy.

Bangers and Mash

Bangers

1 pound of sausage
-
1 tablespoon olive oil
-
3 ounces stout beer
Mashed Potatoes
-
3-4 Russet potatoes (peeled and sliced)
-
2 tbsp butter
-
½ cup buttermilk
Stout Onion Gravy
-
2 Tbsp butter
-
1 onion
-
2 tbsp flour
-
1 cup stout beer
-
1 cup beef broth
-
Salt and pepper
Directions
-
Heat oil skillet on medium-high heat. Add sausages and stout. Cover with lid, but crack enough to allow steam to escape. Cook for 10 minutes, turning halfway through.

After 10 minutes, uncover and let the liquid coat the sausages. Lower heat to medium-low and put the lid back on, rotating for another 10 minutes.

Use a separate pot to heat butter on medium-high heat. Add in onions and cook for 5-10 minutes until they are slightly brown. Sprinkle with flour and allow to cook for an additional 2-3 minutes.

Add stout and beef broth. Simmer for 10-15 minutes.

Cover potatoes with water and boil. Cook until soft. Drain water, then add butter and buttermilk. Mash!

To serve, top potatoes with sausage and pour the gravy over!
Irish Potato Bites

Ingredients

20 red potatoes

½ cup Corned Beef
-
¼ cup Cheddar Cheese (shredded)
-
1 Tbsp butter (melted)
-
⅛ tbsp salt
-
Sour Cream (for topping)
Directions

Fill a large pot with water and bring to a boil. Add potatoes and boil until tender. Once they are cooked, cool them by cutting a small slice off the rounded end, so they can stand up.

Preheat oven to 400°F.
-
Scoop the inside of the potato half and save in a bowl. Add cheese, corned beef, and butter to the bowl. Salt the mixture the way you like it, then add some salt to the potato halves.

Scoop the mixture from the bowl into the potato halves and place them on a baking sheet.
-
Bake for 10 minutes and serve with some sour cream!
Irish Soda Bread

Ingredients

3 ⅔ cup all purpose flour (if the dough is too wet, add more flour at ¼ cup increments)
-
1 tsp Kosher or sea salt
-
1 tsp baking soda
-
1 ¾ cup buttermilk
Directions

Preheat oven to 425°.
-
Mix flour, salt, and baking soda together in a mixing bowl. Make a well in the center and pour buttermilk. Mix together with the paddle attachment of your mixer, or knead the dough by hand until it is soft.

Knead an addition 3-4 times on a lightly floured surface.
-
Shape into a flat circle and place on parchment paper and a baking sheet.
-
Cook for 25-30 minutes. Tap it, and if it sounds hollow, it’s ready!
Instant Pot Corned Beef

Ingredients

3 pounds of corned beef, with spice packet
-
1 cup of water
-
3 cloves of garlic
-
1 bay leaf
-
2 Tbsp sugar
-
2 tbsp apple cider vinegar
-
½ tsp ground black pepper
Directions
-
Add corned beef fat side up to the Instant Pot then add minced garlic, the spice packet, sugar, and pepper to the top of the meat and rub it in.
-
Add vinegar and bay leaf to the side of the beef and add just enough water to come 25% of the way to the top of the beef.
-
Cook on low for 8-9 hours!
