Cooking The Books: No Crumbs Left Delivers The Best BLT Salad We’ve Ever Had

Whether you’ve decided to do a lifestyle overhaul as of January 1st, or you’re just looking for an easy, tasty way to add more vegetables to your repertoire, No Crumbs Left by Teri Turner is a great way to discover your new favorite dinners. 

The blogger’s cookbook is stuffed full of healthy, Whole 30-compliant recipes that never make you feel like you’re missing out. Whole 30 is not something I have ever participated in, but I was still drawn to this book. One thing I love about No Crumbs Left is that a lot of the recipes feature other components and recipes from the book. It’s a great thing to be able to work through the book. 

The BLT Salad is a gluten-free recipe that’s perfect for lunch or dinner. Or even breakfast — I’m not here to judge!

Ingredients

  • 2 small romaine hearts, halved lengthwise

  • ½ cup of Marinated Red Onion oil (see this link)

  • 2 medium tomatoes, sliced

  • 8 slices of Perfect Oven Bacon (see this link)

  • Yolks from 4 large hard-boiled eggs, grated

  • 1 avocado, chopped

  • Creamy Horseradish Dressing (see this link)

Directions

  • Make the Marinated Red onions at least 3 hours in advance.

  • Make the Creamy Horseradish Dressing.

  • Make the Oven Bacon.

  • While the oven bacon is cooking, prepare your Jammy Eggs (see this link).

  • Slice the tomatoes, chop the avocados, and halve the romaine lettuce hearts lengthwise.

  • Assemble your salad platter: Start by placing the romaine lettuce hearts on the platter. Sprinkle thoroughly with salt and drizzle with the marinated onion oil. Layer the tomatoes and bacon on top of the lettuce. Then place the jammy eggs on the platter.

  • Top the entire salad with Marinated Red Onion and serve with Creamy Horseradish Dressing. 

This recipe was a real hit in my household. I would never think to use a horseradish dressing on this salad, but it was a winner. I think the only thing I would do differently is chop up the romaine instead of just leaving the leaves large. It’s visually cooler to have the leaves left large if you’re serving this at a dinner party, but it’s just easier to eat if it’s chopped up a bit more.
