I don’t know about you, but after the week I’ve had I definitely need a margarita. Maybe a pitcher of margaritas. With wildfires raging just over the hillside from our home and waiting to see if we would need to evacuate (we have four horses and no horse trailer, what a smart idea) it was a wee bit stressful. My niece was staying with me and my son was home from college, plus his girlfriend has flown in from Miami to visit as well so I had plenty of extra people to worry about. Also wildfires plus two kids with asthma = super fun times. I hope it doesn’t sound like I am complaining, I had it easy compared to so many. People in Northern California lost family members to the fires up there. People here lost their homes. I lost a little sleep, so what?

So now back to those margaritas… it’s Friday. We need margaritas, no? Whether this week was back to school for your family, you had a long week at work, or you just like tequila- this post is for you. I only used to order margaritas in restaurants because the margarita mix you could buy in stores tasted overly sugary to me and it seemed really complicated to make them myself. The whole salted rim thing seemed like magic and I am neither wizard nor scientist so I stuck to Mexican restaurants and the bar at the Club until a kind bartender schooled me on how easy margaritas are to make! This recipe is for skinny margaritas which are my go to order. They literally have like 4 ingredients and you can make a whole pitcher and impress your friends. Or drink the whole thing and impress yourself and probably your toilet bowl.

Here’s the secret recipe from my secret source who shall not be named, mostly because I cannot remember his name and he didn’t write it on the post it note he scrawled this recipe on. You can substitute any fruit juice, so play around with whatever you want- Smash up black berries, watermelon, use pom juice- it’s all delicious. Use any kind of tequila. I prefer Karma Silver but any one you prefer is fine. And if you don’t like agave syrup or don’t have any you can dissolve sugar in water on the stove top and make your own simple syrup (it won’t be skinny fyi).
For One:
- 1 1/2 oz tequila
- 1 large or 1 1/2 small limes juiced
- 1/2 medium orange juiced
- 1 tsp agave syrup
- ice
For a Pitcher:
- 1 cup tequila
- 5 medium/large limes juiced
- 4 medium oranges
- 2 tbsp agave syrup
If you like the salt rim, get a shallow bowl or rimmed plate and fill with a kosher salt/sugar mixture to your liking, then you slide a lime wedge along the rim of the glass until it’s moistened and you dip it into the salt mixture and voila- magic!
