These Healthy Stuffed Bell Peppers Are Easy To Make And Absolutely Delicious

One of my favorite foods is bell peppers. Every kind and form is delicious. Fresh, baked, sautéed. Yellow, orange, green. It’s all delicious. I could eat them endlessly.

But I wanted to up my game, because I’m always trying to make a full meal with them. Enter: these stuffed bell peppers.

Not only are they absolutely delicious, they’re easy to make, too. Like, put rice and quinoa on the stove and let it go. Cook some turkey and add spices. Mix it together, put it in a pepper. Boom: you have a filling. Sprinkle cheese on top of it, let it melt into ooey goodness, and indulge in a full-on dinner that’s healthy and delicious. If your mouth is watering from reading this, understandable. Here’s the recipe that will change your bell peppers for the better.

Healthy Stuffed Peppers

Ingredients

  • 3-4 bell peppers

  • 1 lb. ground turkey

  • ¼ cup uncooked quinoa

  • ½ cup uncooked brown rice

  • 14 oz. black beans

  • 1 tbsp. chili powder

  • 2 tsps. Cumin

  • 2 tsps. Garlic powder

  • 1 tsp. paprika

  • 1 tsp. dried oregano

  • ½ cup shredded cheese (of your choice)

  • A dash of salt and pepper

Directions

1. Preheat the oven to 350°F.

2. Cut the bell peppers in half and core, then rub with olive oil, salt, and pepper.

3. Cook the brown rice, using a 1:2.5 rice to water ratio, for 30-40 minutes. This will yield 1 cup of brown rice. Fluff the rice, then set it aside.

4. Strain your quinoa, then boil the quinoa for about 10 minutes. This will yield 2 cups of cooked quinoa. Fluff the quinoa, then place to the side.

5. Take the ground turkey to a saucepan on medium heat. Break it up, adding salt and pepper for taste, until it’s fully browned – about 7-8 minutes. Once it’s cooked through, add the chili powder, garlic powder, dried oregano, smoke paprika, cumin, and ½ cup of water. Mix until all ingredients are thoroughly combined, then turn the heat to low.

6. Rinse and drain the black beans, then mix with the brown rice, quinoa, and ground turkey.

7. Scoop the filling into the bell peppers, then sprinkle cheese on top.

8. Bake for 30-35 minutes, or until peppers are soft and cheese is bubbling.

9. Let cool, then serve!
