Whole Grain Pumpkin Spice Waffles

2 + ¼ cups oat flour

1 Tbsp baking powder

¾ tsp salt

1 tsp cinnamon

½ tsp ginger

¼ tsp nutmeg

¼ tsp allspice or cloves

3 large eggs

⅔ cup milk of choice

½ cup melted coconut oil
-
½ cup packed pumpkin puree

3 Tbsp maple syrup

1 Tbsp vanilla extract

In a large mixing bowl, combine the oat flour, baking powder, salt, cinnamon, ginger, nutmeg, and allspice or cloves. Whisk to combine.

In a medium mixing bowl, whisk the eggs then add the milk, coconut oil, pumpkin puree, maple syrup, and vanilla. Whisk until the mixture is thoroughly blended.

Pour the mixture into the oat flour mixture and stir until it’s just combined. Let the batter rest for 10 minutes and plug in your waffle iron to preheat.

After 10 minutes, stir the batter one more time and pour it onto the waffle iron.

Repeat with the remaining waffles and serve with your desired toppings.
